Preparation

  • Rinse the quinoa well under cold water.

Ingredients

  • 2 chicken breasts, cut into cubes
  • 1 red pepper, cut into pieces

Watermelon gazpacho

Ingredients

  • 4 cups watermelon, seeded and cut into cubes
  • 2 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • 1 clove of garlic
  • 3 tablespoons white wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh basil leaves to decorate

Preparation

  • In a blender, combine the watermelon, tomatoes, cucumber, bell pepper, onion and garlic. Blend until smooth.
  • Add the white wine vinegar and olive oil. Season with salt and pepper to taste.
  • Refrigerate the gazpacho for at least 1 hour before serving.
  • Serve cold, decorated with fresh basil leaves.

Ingredients

  • 1 ripe mango, peeled and cut into cubes
  • 1 ripe banana
